Ok I am going to bring you this one in 3 parts because it takes a few steps but it is well worth it. The duck was crispy on the outside and beautifully pink in the middle. The root vegetables roasted with apples were sweet and savory and just paired perfectly with the duck. And the lentils were soft and smooth with great flavor.

I started it out with roasted walnuts with crumbles of Shropshire Blue and a honey drizzle. It was just a fantastic winter meal.

 

Ingredients you will need (serves 2):

 

1 duck broken down

2 onions chopped

3 leaks chopped

1-2 parsnips

1 fennel bulb chopped in quads

3 carrots

2 stalks of celery chopped

10-12 pearl onions pealed

2 granny smith apples cubed

1-2 cups of lentils                                                                                               great easy app.

2-4 sprigs of thyme

1 bay leaf

Salt and pepper
